I have already said here, it is not natural for me to do my shopping in cash, I usually filled bag, tote or caddy and in the end when I pass in hand I hear, sometimes with good surprise, others ... Do I have to pay. With these menus it is different because I have to calculate for my cheap menus! A different way of doing ...

And this time I thought that the sun knocking on our door was a nice menu with freshness and especially a vegetarian menu that would be a good idea! And for this complete and balanced menu it will cost less than 3,5euros person long as you use the Bio brand products as I did, a price you can even reduce by not using like me mainly organic products ...

And to start this menu a refreshing tabbouleh flavored cauliflower!

Ingredients for 4 people: 500g cabbage flower Frozen Organic Village MR - 60g cherry tomatoes Bio Village MR - 4 or 5 Bio Village MR shallots - 5 parsley stems leafless - 5 mint sprigs leafless - 15g golden gears quickly - the juice of 1/2 lemon Bio Village MR - olive oil 2 cases Bio Village MR - Salt and pepper
Boil a large pot of salted water and when the water comes to a boil throw in the cauliflower florets. Cook for 2 to 3 minutes, no more, cauliflower should remain very very al dente. Drain the cauliflower and put them in a large bowl of cold water. Drain well cauliflower.

Pour your cauliflower in a blender, preferably use a big mix or do it twice, and mix it until a kind of rather fine semolina. Then I suggest you pay the cauliflower in a towel and compress it, otherwise it remains waterlogged. Pour your meal in a bowl and sprinkle it with lemon juice and olive oil, salt and pepper and mix.

Then cut your cherry tomatoes into four, peel and roughly chop the shallots, coarsely chop the herbs. Put everything in the blender and blend finely enough.

Pour with cauliflower couscous and mix well.

Chop the nuts.
Just before serving toss the sprockets on the tabbouleh and finish by decorating with parsley leaves.
